The waffle is one of our favorites, anytime. It is made with my Lois' Buttermilk Whole Wheat Pancake Mix. ( of course, using the fresh milled wheat flour) It is such a handy mix to have on hand. There is no sugar in the mix, I add some stevia to the batter.
My husband, "Skee" was a good taste tester.! I always made a small 1/2 # loaf of bread for us to try so we can check the flavor and texture. I use All Fruit jams since we watch the sugar content in what we eat.He usually gave me 2 thumbs !up Hewas my "right-hand-man" in this business. He sliced bread, packaged and labeled it, plus carrying out to the tent or car in the summer for farmers market.
The Whole Wheat Bread is our top seller. People tell me they are hooked on it after the first time they tasted it. There is NO bleached or enriched white flour in it. It is swweetened with honey or molasses. I recently found some tips on-line that enhance your whole grain breads. It has some potato flour, ginger in it . Many times, grandma used potato water in the bread she made and that improved texture a lot. I use 1 T. for 2 loaves of bread. !/4 t. of ginger is used for 2 loaves. Yeast loves ginger! 1 cup of orange juice enhances the whole grain dough. Prayer is one of the ngredients listed on the bread label. I pray over every loaf of bread, that the recipient who buys it will benefit from the nutrients in it and be blessed, I never know who is going to buy it or do I know what kind of needs they have. I've seen my prayers answered many times as people have shared with me how they enjoyed the breads and have been benefited.
As of October 2022, I am no longer selling breads from our home on Riverside Dr. in Brainerd. Since Skee passed away in July, many changes have taken place. The house in Brainerd is for sale and I have moved to an apartment in Clear Lake, Mn. I am hoping to find a location for Lois' Breads closer to me in the St.Cloud area.
